DINNER IN A DASH
The last few weeks have been so busy & left me with very little time & energy to cook. This CHINESE CHICKEN SALAD has quickly become a staple weeknight meal. It is quick & easy to prepare, plus all the ingredients can be found in your local grocery store for under $20! What could be better?
This salad combines healthy broccoli slaw with rotisserie chicken & gets an unexpected crunch from the Ramen noodles, all covered in a slightly sweet dressing. With this salad, you'll be able to get dinner on the table quickly & still provide a filling meal.

CHINESE CHICKEN SALAD
1 package broccoli slaw
1/2 cup shredded carrots
2 packages chicken flavored Ramen noodles
2 green onions
1 rotisserie chicken
1/4 cup cashews
2/3 cup extra virgin olive oil
2 Ramen noodle seasoning packets
2 tablespoons vinegar
3 tablespoons sugar
In a bowl, combine broccoli slaw, shredded carrots, & sliced green onions. Break up ramen noodles while they are still in the package & pour into the bowl, reserving the seasoning packets for the dressing. Shred rotisserie chicken & add to bowl.
In a container with a lid, combine olive oil, seasoning packets, vinegar, & sugar. With the lid on, shake vigorously to combine. I like to use the glass dressing carafes to mix all my dressings. Slowly pour 1/2 of the dressing over salad mixture & toss to combine. Taste & add more dressing, if desired. Add toasted cashews right before serving.
This salad is great right away, but also makes delicious leftovers.
