When it comes to cheese straws, I do not discriminate. They come in many shapes & sizes, but I love them all.
These CHEDDAR CHEESE CRISPIES put a crunchy spin on classic cheese straws & they are packed with bold cheese flavor. While traditional cheese straws require using a complicated cookie press, these are much easier to make. From grating the cheese to mixing the dough, everything can be done in the food processor!
This recipe makes A LOT (around 60 crackers), so they are perfect for entertaining. You can definitely cut the recipe in half if you just want a few, though I doubt these will stick around long.
With the Holidays near, you'll want to try these for all of your get togethers!
CHEDDAR CHEESE CRISPIES
2 cups sharp white cheddar, freshly grated
2 cups extra sharp cheddar, freshly grated
2 cups all-purpose flour
1 cup butter, softened
1/4 teaspoon seasoned salt
1/2 teaspoon cayenne pepper
2 cups Rice Krispies cereal
Preheat oven to 350 degrees.
In a food processor, combine butter with flour, salt & cayenne pepper. Pulse to combine.
Add the freshly grated cheddars & pulse until dough forms into a ball.
Move dough into a bowl & add the Rice Krispies. Mix together with your hands. The less you work the dough, the crunchier your crackers will be.
Scoop 1 tablespoon balls onto a parchment lined baking sheet. Flatten each ball with a fork dipped in flour.
Bake at 350 degrees for 20-25 minutes, until golden brown. Let cool before serving.
